Garam Masala...the key to making any savoury dish. Without a good quality Garam Masala, your food will just lack that level of flavour that you want and deserve. Make sure that when you are choosing a Garam Masala that you remember a few key points...Firstly, always read the ingredients in the Garam Masala - although this spice blend has one name, the recipes can vary hugely. Cinnamon tastes different to peppercorns, which are different to green cardamom or cumin seeds. Some Garam Masalas contain dried chilli flakes, others will not. Take that extra minute to read the ingredients list. Secondly, look at the consistency of the grind. Always remember that you don’t want the Garam Masala to be like a powder as you’ve lost most of the essential oils from the spices (essential oils = flavour). Thirdly, check the price. Don’t be sucked in by a low price. If it looks too good to be true, it is. Spices are expensive, if you find Garam Masala for £1 , they’ve compromise the taste a quality by using higher quantities of cheaper spices like black pepper and using hardly any cardamom, which is expensive and adds essential flavour balance. So although you may be saving money, you’ll pay for it when you eat your finished dish and the flavour balance is off.
